Phoenix City Grille Announces New Culinary Team

Phoenix City Grille (PCG), located at 5816 N. 16th St., has recently revamped its culinary team. The restaurant’s owner Dennis Shaw is pleased to announce the appointment of longtime employee Uriel Telix to the role of Executive Chef, promotion of Corey Azure to Executive Sous Chef and new hire Severo Hernandez to that of Sous Chef. 

 

“We are pleased to welcome Severo as our new Sous Chef and to promote Uriel to the position of Executive Chef as well as appoint Corey to Executive Sous Chef,” said Shaw, an industry veteran with 40 years of experience. “The talents of these three chefs are sure to be noticed by our diners and we will continue focusing on consistent excellence while also presenting new and exciting experiences for our guests.”

 

Executive Chef Telix has worked at Phoenix City Grille for 19 years. He began as a line cook, then became Sous Chef and finally Chef de Cuisine before being promoted to Executive Chef. During his nearly two decades with PCG, Telix has had the opportunity to grow and refine his craft. Specializing in Southwest cuisine, with a focus on incorporating local and indigenous ingredients to create unique and vibrant flavors, Telix enjoys blending global cuisines to bring new and exciting elements to my dishes.

“I’m looking forward to inspiring and leading our talented culinary team to carry on the tradition and legacy of Phoenix City Grille,” Telix said, adding, “Our guests can continue to expect fresh, creative dishes made with locally sourced ingredients. I’m excited to evolve the menu with innovative ideas while staying true to the spirit of Phoenix City Grille.”

New to Phoenix City Grille, Severo Hernandez has been working as a sous chef at other restaurants, such as Sierra Bonita Grill and North Italia, for 12 years. He loves leading in the kitchen and motivating everyone to work at their fullest protentional. While he has created many different types of cuisines, Mexican and Italian are two of his specialties. 

 

From Oaxaca, Mexico, where he grew up in a large family and helped prepare meals for family gatherings and special occasions, Hernandez says making people happy and helping them come together through food is what inspires him to continue those traditions while putting his skills to the test.

 

“I’m excited to be part of the PCG team and look forward to being part of a growing business,” said Hernandez, “In this role, I strive to show my passion for cooking and will go out of my way to guide others to do the same.”

 

Corey Azure has worked at Phoenix City Grille since 2005, previously serving in the role of Sous Chef. His studies include culinary school at the Art Institute of Phoenix and Le Cordon Bleu, London and Paris. Though he has a background in French cooking, Azure says he has learned much about Mexican cuisine by working with Telix.

“Being able to execute an idea and seeing the reaction to a good recipe is very rewarding,” says Azure of his passion for cooking. “My cooking is inspired by tasting other cuisines and trying to learn new flavors.”
